- Baker’s percentages are all relative to the flour weight (flour = 100%), so a recipe scales to any batch size by keeping the ratios fixed.
- The starter gotcha: a 100%-hydration levain is half flour and half water, so a 20% starter quietly adds flour and water to the dough. The calculator reports the true total flour and true hydration once that is included — they are higher than the numbers you enter.
- Hydration here is the water you weigh out as a percent of the flour you weigh out; salt and extras are percents of that same base flour. Sane ranges are enforced (30–120% hydration, 0–10% salt).
